As promised, here is my own version of Tuna Lumpia (Tuna Spring Rolls Tuna). DH swears that this is yummy and I believe him. :) I prepared 20 pieces for the three of us (plus our laundry girl) during lunch time and I believe I ate six! And before sleeping that night, I fried the remaining rolls for our midnight snacks. Don’t ask me how much I consumed that night. Let’s just say that if I keep on doing this, I will be needing the help of the best weight loss pills in the world.
OK. Here are the ingredients. Pardon me for there are no measurements. That’s how I cook. Haha! I just go by how much I think I will be needing.
A can of tuna (I usually buy Century Tuna, Guisado)
An Egg, lightly beaten
Cornstarch (just a dash)
Cheese cut into strips
Oil for frying
Procedure (Very, very easy. Trust me.):
1. Mix all the ingredients together, except for the last three.
2. Place one tablespoon of the tuna mix at the wrapper and add a cheese strip or two on top. Roll the wrapper towards the middle. When half-rolled, take the sides and fold them inward. Brush the edges with water before sealing it completely.
3. Heat skillet and pour in the cooking oil. You will know that it’s ready when the oil starts to smoke. Start frying and remove once they turn golden brown.
4. Use paper towel to drain excess oil. Serve hot with your home-made sauce. I prefer Del Monte Sweet Catsup or the Del Monte Sweet & Spicy Sauce.
You may want to experiment and add vegetables to make this recipe more healthy and nutritious. I tried adding shredded cabbage last Saturday and DH commended it. :)
